Publix's differentiators
When talking with renowned British Columbia chef and foodservice
consultant Chuck Currie for this month's issue, the topic of conversation ranged wildly. After a while it landed on differentiators.
Currie's advice to any foodservice retailer - whether it's a supermarket,
c-store or restaurant - is to do something really well that sets you
apart. Sure, variety is important, but you need something that keeps
customers coming back again and again.

deli meats, help from the seafood department - it all adds up to an interdepartmental effort that produces a unique, memorable sandwich.
"That's such a big differentiator for us," Publix spokesperson Kimberly
Reynolds told me as we toured the company's new store just south of
Richmond. "Our customers really appreciate quality, freshness and
value and all of our fresh departments work together to provide it."

Publix has that and it's a big reason the popular Southeastern grocer is
making a move northward, into the Mid-Atlantic with several locations
in the Richmond, Virginia area.

The rest of Publix's foodservice efforts are high-quality as well and are
important to the overall success of the fresh and prepared side of the
store. Their Chef's Selections line of prepared meals, fresh salad bar,
bakery and sushi departments all play a role.

It starts with the store's beloved subs and hoagies, which have developed
a loyal following throughout the company's footprint. Bread from the

But those sandwiches are known so well that they're talked about in
parts of the country that have yet to see a Publix. And that makes all
the difference.
