Providing nutritious meals to help clients thrive is a key focus for
every foodservice operation. To that end, Nutrition is one of five
broad subject areas covered on the CDM Credentialing Exam.
A new Exam Content Outline became effective in March 2021, so
now is a good time to explore the updated Nutrition component
so that CDM, CFPPs-and those aspiring to certification-can
review the topics covered in that category. It's also an ideal time to
think about filling in your skill gaps and meeting your continuing
competence needs.
CONTINU ING EDUCATION VS .
CONTINU ING COMPETENCE
Continuing competence, which differs from continuing education,
has become the preferred way for credential holders to enhance their
professional knowledge and meet their unique education needs.
Continuing education helps credential holders maintain knowledge
and remain current after initial certification or licensure. Continuing
competence, on the other hand, brings added value to certificants
and their employers, because the concept ensures that individual
education deficits are filled. It also stresses lifelong learning. The
Certifying Board for Dietary Managers is exploring a shift to the
continuing competence model of professional education, so watch
for details.
The Scope of Practice for the CDM, CFPP defines the role and
responsibilities of a certified dietary manager, certified food
protection professional. Combined with the Gap Analysis Tool-
which helps the CDM, CFPP prioritize continuing education
opportunities to help meet their own individual education
