making a difference in their facilities
and their profession.
TENURED FOODSERVICE PROFESSIONAL SAYS
NEVER STOP LEARNING
SUSAN ZWACK, CDM,
CFPP is the Culinary Director
at Transforming Age/Waterford
Senior Living in Brooklyn Park,
Minn. She has been in her current
role for over 15 years and has been a
CDM, CFPP since 2001.
Zwack decided to become a CDM,
CFPP after dedicating 30 years to
her foodservice career and realizing
that the credential would add to her
expertise.
In her position as Culinary Director,
Zwack is responsible for running
the kitchen and dining room along
with her dining room manager. She
also orders food and meets with
residents to include them in the
creation of their menus based on
resident preferences.
While Zwack enjoys her role, it is
not without its challenges. The
largest struggle she faces pertains
to staffing in a niche industry.
" These days, everybody is fighting
for the same people in the working
world of food service, " Zwack said.
" The staff I have... I appreciate every
single one of them. I wouldn't be
able to keep the kitchen up and
running if it wasn't for them. "
" KEEP LEARNING.
I learn new things every day in my career as
a CDM, CFPP. "
Zwack's favorite aspect of her role is
interacting with the facility residents.
" I learn so much from the residents,
through their shared stories and
extraordinary life experiences, " she
said.
To keep her department connected
with the needs of her facility, Zwack
works to stay current with regulations.
" I am always looking up new ideas
and staying up to date with food
codes, " she said.
For those just getting started in
their foodservice careers, Zwack
encourages learning.
" Keep learning, and keep learning, "
she said. " I learn new things every
day in my career as a CDM, CFPP. "
