the FASTER Act, it may be listed one
of two ways. It can be included in
the ingredient list or in a 'contains'
statement (see label figure).
If you have foods manufactured prior
to January 2023 in your facility, you
should know that sesame may be
present since it did not have to be
declared prior to that time. If you are
unsure about the presence of sesame
in a food, best practice is to reach
out to the manufacturer to inquire.
Remember, food products that were
already in the marketplace were not
required to be removed or relabeled to
be compliant with the new legislation.
Additionally, be mindful that food
product ingredients can change over
time, and you need to verify labels
every time a food item is purchased
(Food and Drug Administration. Office
of the Commissioner, 2023) (Food
Allergy Research & Education, n.d.).
YOUR ROLE AS A CDM, CFPP
What is your role as a CDM, CFPP in
managing sesame allergy?
* Update any client information to
include sesame as the ninth Major
Allergen.
* Add sesame to any food allergy
intake forms you have at your
facility and ask clients about food
allergies.
* Update your operating procedures
regarding food allergies.
* Conduct an up-to-date in-service
with your staff to train them
on sesame and review the other
allergens.
* Participate in continuing education
(CE) to learn more about food
allergies.
* Review the new Food Code
language regarding food allergies
and employee responsibility,
as it pertains to the foodservice
operation.
* Ensure that current employees can
describe the 9 major food allergens,
symptoms of a reaction, and your
standard operating procedures.
* Conduct audits with staff prior to
the employee annual review.
* Include allergy information in your
employee on-boarding.
* Review standardized recipes
and make adaptations to ensure
avoidance of food allergens.
SUMMING IT UP
When it comes to food allergies, it is
more than saying the magic words
'open sesame' to keep others safe. It
takes a coordinated and collaborative
approach in health care and other
settings. E
