CDM, CFPP SPOTLIGHTS

CDM, CFPP URGES YOU TO
FIND YOUR NETWORK AND CONNECT
DARCY STUEBER, CDM, CFPP
is the Director of Nutrition Services
at Mankato Area Public Schools in
Mankato, Minn. She has been in her
current role for over five years and
has been a CDM, CFPP since 2012.
Stueber decided to become a CDM,
CFPP so that she could understand
the needs of her clients with more
professional context.
" The care facility I worked in at the
time was set up a little differently
than most care facilities. I served as
the director and oversaw staffing,
menu development, and customer
satisfaction, " Stueber said. " We
also had another CDM, CFPP that
worked directly with the clients,
[and] took care of their diet needs
and charting. I decided to become
a CDM, CFPP so I would understand
the specific needs of my clients
better. "
In her role as Director of Nutrition
Services, Stueber oversees the
compliance of six state/federal
funded USDA nutrition programs
that serve 8,100 students in 14
kitchens and 20 buildings within
her school district.
While Stueber enjoys her role as
Director of Nutrition Services, it
is not without its challenges, and
the largest struggle she faces is the
extensive search for qualified staff
members.
" Being short-staffed puts such a strain
on our excellent team. If we do not
take care of them we will lose them, "
Stueber said. She notes that her
department is still experiencing food
shortages from the pandemic, which
adds an extra layer to her staffing
challenges by hitting morale.
Stueber's favorite aspects of her role
are interacting with her clients, who
are predominantly students within the
school district.
" Their curiosity and enthusiasm are
contagious. Even if there is negative
feedback, it is an opportunity to
educate, grow, and improve, " Stueber
said.
" Idea sharing at meetings is so
much fun, " she said. " I am always
impressed by the innovation that
happens in our kitchens. "
For those just getting started in
their foodservice careers, Stueber
shares important advice.
" Find your network and connect
with a mentor. Ask questions! You
will never learn unless you ask
questions, " she said. " Take time to
go to state or national conferences.

To keep her department connected
