Food is one of life's greatest joys. Beyond providing nourishment, food draws us
together with family and friends.
The pandemic changed the nation's dining habits. In long-term care, foodservice
professionals were challenged to make menus and mealtimes special, despite dining
room closures and other issues that called for creative solutions. With restaurants
temporarily shuttered, and trips to the grocery store limited, many families
rediscovered home cooking by poring through their recipe boxes and exploring
culinary websites and videos.

In this issue we explore a few culinary trends. Fermented foods have made a strong
comeback and provide some unexpected health benefits, such as improved digestion.
People are also seeking metabolism-boosting meals and snacks. Protein-rich foods
such as meat, fish, and dairy are good choices. Legumes and certain spices can also
rev up your metabolism.
Nutrition and brain health are connected, and sound food choices have been shown to
stave off depression, anxiety, and even Alzheimer's disease. The pandemic has triggered
a mental health crisis, so knowing which foods and nutrients can be helpful is vital.
Satisfying the needs of a multicultural population with food choices familiar to
them will promote greater nutrient intake. Listen attentively to your clients when
they express their preferences. See the participation strategies implemented by a
Massachusetts congregate meal program found on page 32.
One of our articles describes the mysterious fifth taste sense, umami. This savory flavor
can improve meal intake, which is especially important in healthcare settings.
