TO SURVIVE AND THRIVE
GOOD NUTRITION AND ADEQUATE HYDRATION are
key elements to surviving and thriving. This issue we've got
articles on both topics.
Our Food Trends cover story discusses items that are heating
up the kitchen in 2022. Plant-based products, ancient grains,
probiotic foods, and all things oats have gained prominence
in foodservice operations this year. In her page 16 article,
Chrissy Carroll, MPH, RD outlines both the nutrition and
culinary implications of seven popular trends, and provides
tips on how to use these foods in innovative ways in your
dining program.
Educating clients on effective nutrition and MNT practices
often involves collateral materials. Curating or creating
effective handouts is important to supplement your verbal
nutrition counseling. Seeking evidence-based information
and respecting copyright laws are crucial practices when
assembling a collection of education materials. Kristin
Klinefelter, MS, RDN, LDN provides strategies to ensure topquality
handouts are available for your use at any time. See
page four.
In addition to nutrition, the body requires sufficient fluids
to function properly. Drinking water is a great, calorie-free
way to stay hydrated; but other beverages, fruits, and certain
foods can also help clients maintain hydration. Learn more
about the CMS requirements for hydration in long-term care
in our page 10 feature.
Speaking of best practices, the FDA Food Code delivers
sound advice on safety and sanitation practices to protect
consumers from foodborne illness. ANFP Member Kathleen
Brady, CDM, CFPP, CP-FS, PCQI is a health inspector, and she
provides insights to help facilities get a favorable inspection.
Her page 25 article is loaded with success strategies.
Another article in this issue focuses on an individual's
personal experience of walking away from food service at
different junctures in his life. John Cramutola, CDM, CFPP is
currently enjoying his position in school food service, but he
took a winding road to get there. Read his story on page 28.
