kitchen
SHARE THOSE INITIALS
BEHIND YOUR NAME

REFLECTING ON MY CAREER in
long-term care, the phrase that always
got to me-and not in a good way-
was when I was referred to as the
cook that " runs " the kitchen. Whether
this came from leadership within the
building, our residents, or even their
families during care conferences,
it was frustrating that no one really
understood the initials behind my
name. I worked hard to become a CDM,
CFPP and yes, I could cook; but I also
managed, budgeted, and supervised
the care community's second largest
department of talented individuals
providing much more than " three hots
& a cot " each and every day!
I am a nutrition and foodservice
professional and food safety expert
fully certified, with continuing
education to meet all the requirements
set forth by the FDA Food Code and
CMS Long-Term Care Competencies
for the Director of Food & Nutrition
Services.
I recall hearing from other department
heads, know your worth...show your
value! The best advice came from a
" seasoned " Director of Nursing at
the time-shed the apron and hairnet
and come out of the kitchen. Be a
professional and join the management
meetings, dress up for success on the
days needed. She had her nursing staff
trained that when she was in scrubs,
she was working the " floor. " When
dressed up, she was representing the
department in her professional role as
the Director of Nursing.
This started my journey of
enlightenment, shedding my cook's
cocoon and butterflying into the CDM,

CFPP care professional that I had
trained to become. I was able to share
what the CDM, CFPP education was all
about while networking with the other
department leaders, and provided
the HR director with the CDM, CFPP
Scope of Practice. This connection
provided the opportunity to adjust the
Foodservice Director job description
to include CDM, CFPP certification as
well as two other important items-
reimbursement for required annual
continuing education (CE) and the
CDM, CFPP certification fee.
I just wanted to share a little
background on how this support early
in my career opened many doors
for me with my continued sense of
pride in my credential, and a better
understanding of my professional
leadership role.
