Acute Care-Total Food Cost Per Meal
Labor Cost Per Patient Day also rose for
acute care facilities. The middle 50th
percentile jumped from $46.34 per day
to $55.69.
Average Length of Time to Hire ranged
from a low of 27 days in the 25th
percentile to as high as 120 days in
the 75th percentile. The middle 50th
percentile showed an increase of 33
percent from 45 days to 60 days from
2020 to 2021.
Likewise, the Staff Turnover Rate
also increased across all percentiles,
with the 50th percentile more than
doubling from 16.59 percent staff
turnover in 2020 to 36.36 percent in
2021.

SUMMARY-ACUTE CARE
Questions were added to the 2022
study that focus not only on salary,
but also on the " typical " foodservice
director. Study results show that
65 percent of acute care foodservice
directors manage one facility, 54
percent supervise between 6-15
employees, and 36 percent have more
than 25 years of experience. Forty-five
percent of respondents indicated they
were planning to increase staff in the
next two years.
