have been relegated
to the backs of
cupboards - yet winter is their time to
shine. Yes, they excel at stews and curries,
but the energy-efficient devices are perfect
for lighter meals and desserts too - all
ready for when you finish work.

There's a knack to using a slow cooker
that can mean all the difference between
serving up a underwhelming offering and
a MasterChef-worthy marvel. Saskia, a food
writer and recipe developer, shares three
tips to save your cooking from disaster!
* Less is more If you're adapting one of
your favourite recipes for the slow cooker,
reduce the liquid content by at least a third,
if not half. Most of it won't evaporate.
* Layer flavours It can be tempting to skip
preliminary stages such as sautéing onions,
toasting spices or marinating vegetables,
but these steps will add deep flavour.
* Consider temperature If your ingredients
are refrigerator-cold this will affect cooking
times. Make sure any stock in the recipe is
boiling hot before it's added or this will
delay the cooking process.
