Kitchen Notes
ROASTED CARROTS WITH TURMERIC
HONEY
Ingredients:
3 pounds carrots peeled and halved on
the diagonal
Olive oil
Kosher salt
Ground black pepper
¼ c. honey
1 tsp. cumin or coriander seeds lightly
crushed
½ tsp. ground turmeric
Grated zest and juice of 1 lime
Directions:
Place a baking sheet in oven and
preheat to 500⁰ . Toss carrots with oil,
salt and pepper. Roast on sheet until
browned a bit and tender, about 20
minutes. In small saucepan combine
honey and spices. Stir and simmer, then
remove from heat. Cover to keep warm.
Serve carrots drizzled with honey and
sprinkled with lime zest and juice.
