Ingredients:
12 large eggs
Salt, pepper, garlic powder
1 tsp cream or milk
optional shredded cheese to sprinkle
on top
optional any vegetables left over from
supper
12 cup muffin tin
Baking spray
Directions
Preheat oven to 400°F with oven rack on
middle setting. Lightly spray muffin tin.
Add about 1 tablespoon of vegetables,
if using, to each cup. Crack an egg into
each cup. Sprinkle salt, pepper and
garlic powder on each egg, then drizzle
with about 1 teaspoon of cream. Top
with cheese if desired.
Bake for 16-20 minutes depending on
how well you want them cooked. Begin
checking at 14 minutes, which will
yield a runny yolk and cook to desired
firmness.
Eggs stay fresh when refrigerated in an
airtight container for 3 days and can also
be frozen for later. Reheat at 350° for
about 5 minutes.
Always plant your potatoes and green beans on
Good Friday.
Anything planted on the first day of spring will live.
If you find a horse shoe, you should hang it in the
nearest tree for good luck.
