Regional Notes
The historic Goose Creek Saltworks
Pioneer Village in Clay County, KY
commemorates what was once an active
salt mine where Confederates found the
salt to be " worth more to them than all
their other spoils in Kentucky. " To stop
the flow of this treasure into Confederate
hands, Union armies destroyed the
works and ended salt manufacturing in
Clay County. The Pioneer Village is also
the site of an Appalachian Homecoming
celebration held annually in May.

The world's smallest tarantula, the spruce
fir-moss spider, is about the size of a
fingernail and has only been found to live
in six areas above 5,300 feet in Southern
Appalachia.
In the Kitchen
RHUBARB CRISP
Ingredients:
3 cup rhubarb washed and cut into 1-inch pieces
1 tsp. lemon juice
1 cup sugar
3 tsp. corn starch
2/3 cup each of butter, brown sugar, flour and oatmeal
Directions:
Preheat oven to 350⁰ and butter the inside of a pie dish.
Stir cornstarch and sugar together and add to rhubarb
with lemon juice. Toss together and place in pie dish.
Make topping by putting butter, brown sugar, flour
and oatmeal in a bowl and mixing together with
fingers until crumbly. Pat on top of rhubarb mixture
and bake for 40-50 minutes until topping is crumbly.
Serve warm with a scoop of ice cream.
Approximately 100 billion cardboard
boxes are produced each year in the U.S.
and recycling them only takes 75% of the
energy required to make new cardboard.
