Turkey Gravy
A little spirit in the gravy? Sure!
1 stick (8 tablespoons) unsalted butter
1½ cups chopped yellow onion (approximately 2 onions)
¼ cup flour
* Pork. Is some form of pig a must-have for your
Thanksgiving spread? After all, it's one of Iowa's
top five agricultural commodities. Does the hog
grace your table as a ham? If so, is it spiral or boneless?
Sweet or country salty? Or does the hog take
the form of a tender pork tenderloin instead,
glazed with an orange-cranberry sauce or accompanied
by aromatic herbs?
* Turkey. Do you embrace the traditional roasted
turkey? Perhaps a bacon-wrapped roasted turkey
crowns your holiday feast. Maybe you've gone the
deep-fried route.
* Dressing. Or maybe you call that bready goodness
" stuffing " instead.
* Corn. This Iowa staple can grace your
Thanksgiving meal in oh so many ways: cornbread,
spoonbread, scalloped corn, cornbread stuffing,
macaroni and cheese with corn... or many other
wonderful variations on the Iowa theme.

2 cups heated defatted turkey drippings (use chicken
broth to supplement to get 2 cups)
1 tablespoon Cognac or brandy
1 tablespoon white wine, optional
1 tablespoon heavy cream, optional
1 teaspoon kosher salt
½ teasppon freshly ground black pepper
2 tablespoons chopped fresh herbs (thyme, sage,
rosemary and/or parsley)
 Melt the butter in a large sauté pan over medium-low
heat. Add onions and cook for 12 to 15 minutes, stirring
frequently, until onions are lightly browned. Sprinkle the
flour into the pan, whisk; add the salt and pepper. Cook
for 2 to 3 minutes, stirring constantly. Add the turkey/
chicken mixture and liquor and cook uncovered for 4 to
5 minutes, until thickened. Add the wine, cream, salt,
pepper and herbs. Serve.
