Baileys Irish Cheesecake A taste of Baileys Irish Cream and festive toppings make this classic dessert even better. Who knew that was possible? Adapted from Baileys. com Cake mix (yellow, angel or sponge) 17½ ounces mascarpone 12 ounces Philadelphia cream cheese 2 ounces caster (superfine) sugar 2½ ounces Baileys Original Irish Cream 6 ounces double cream Caramel sauce, popcorn and salted pretzels to garnish Trim the top off one 8-inch layer cake round and put it into a clean cake tin or springform pan. (Set the rest of the cake aside to make an easy trifle, layering cubes of the cake with your choice of pudding, liqueur- optional-and whipped cream.) Beat the mascarpone, cream cheese, sugar and Baileys with an electric or balloon whisk until smooth. Spread over the cake and chill for at least 2 hours. Whip the cream, dollop on top of the cake, and spread it around. Drizzle the caramel sauce over the cream, then decorate with pretzels and popcorn. DRINK RESPONSIBLY LAVENDER LEMON DROP From Oregon Spirits 2oz Luster Lavender Limoncello 2oz Oregon Spirit Dry Gin 1oz Lemon Juice Fill a shaker with ice. Add all ingredients and shake well. Strain into a coupe or cocktail glass and garnish with a lemon slice or fresh lavender. APPLE PIE MOONSHINE MULE From Piedmont Distillery 2 oz. Midnight Moon Apple Pie Moonshine 4 oz. Ginger Beer Splash of Lemon Juice Lemon for Garnish Pour all ingredients into a glass with ice. Stir gently and garnish with lemon wedge or wheel.
