The Asmi (Alaska seafood marketing institute), a body which is in charge of the
promotion of seafood products in the 49th US State, advances down the aisles of
the Seafood expo on board its gleaming foodtruck for the second time. A very
lively spot around which visitors are invited to taste chef's recipes, made with
seafood products of the cold waters of the North-Atlantic Pacific: salmon, pollock, blue cod and red king crab.
During the tasting, you can meet a delegation of fifteen or so companies from
the other side of the Atlantic and learn about this dynamic market. Born in 1981
from a partnership with the State of Alaska and the private fishing industry, the
Asmi promotes sustainable, diversified and reasonable fishing of wild products.
Less costly than Salmon, white fish appeals to a dynamic international market.
gory of white fish copiously supplies
the international trade of seafood
products. We are talking about
7 million tons, with the Alaska pollock (theragra chalcogramma) as a
flagship species (3,36 million tons).
The group of cod, hake and haddock alone weighs around 10% of
the value and 15% of the volume in
the global trade, just behind salmon
and tuna and ahead of pelagic fish.
For the FAO, the catch of Atlantic
cod (gadus morhua), one of the chief
species for Europe which gulps down
nearly two third of global consumption, « stabilized around 1,3 million
tons in the North-East Atlantic ».
King cod - According to the AIPCECEP 2015 study of European dealers
and processers, cod is essential to the
industry. 89% of it is imported. It is
worth noting that we observe a « slackening and even an inversion in the
transfer of initial processing of the
countries of fisheries towards third
party countries, especially China : better technology, improved yield and

portion control reduce the cost gap ».
Only if « cod no longer blocks processing as it has become too expensive »,
explains Laurent Froget, buyer at Davigel. The company reminds us that
« the cod market of the North-East
Atlantic is now under pressure, most
of the cod from Norway, Russia and
Iceland... still transits via China, which
buys it deheaded and gutted. ».
Hake, a special species - The million
tons of hake commercialized comes
from diverse stocks and species.
North Pacific Hake (merluccius productus among others) is fished by Argentina, the United-States, Chile and
Canada. South Africa and Namibia
share almost in equal parts the stocks
of South African hake (merlu capensis). European fishermen tend to target European hake (merluccius merluccius) with a TAC (Total allowable
catch) which is on an upward trend.
Hake is especially consumed in restaurants. « At entry-level, The Pacific
species fillets, caught in Argentina
and Chile and processed on the spot,
are appreciated by public institu-
tions in terms of price-quality ratio »,
explains François Labulle, seafood
product buyer for Brake. « Another
Pacific hake is delivered in frozen-onboard fillets, single frozen, or transit
via China for double frozen, deboned
fish. Another raw material under the
form of blocks is a sort of ore which
can be used in many ways, in cubes,
breaded or processed products... ».
The South African hake remains upmarket. The companies combine two
fillets to create 120-140 g portions
which they call hearts.
