Delta Mossel, son entreprise, a ouvert sur le vieux port un restaurant gastronomique sur pilotis.
Ce dernier héberge une « oyster academy ».

Le français
du Korringaweg

E

n cette mi-septembre, jonglant du
français maternel au néerlandais,
mâtiné d'un fort accent zélandais,
Olivier Camelot guide, intarrissable, la délégation des contrôleurs alimentaires de la
Belgium Food Safety Organisation dans les
étages de l'usine Delta Mossel. « À Yerseke,
un Belge, ça se soigne ! », souligne celui qui
navigue depuis 25 ans entre sa famille
à Lille et son bureau dans la capitale des
moules néerlandaises.
Le plat pays de Jacques Brel demeure
la première destination pour les bivalves
conditionnés dans le Korringaweg, cette
route de quelques centaines de mètres
qui dessert les « Big 7 », soit les sept
acteurs majeurs de la moule installés à
Yerseke.
Mais la France est le deuxième client,
alors le bilinguisme d'Olivier est prisé  :
« Vous parlez très bien le français ! », s'excla-

ment certains clients, croyant avoir affaire à
un commercial batave. Avec parfois la boutade, « t'es pire que les Hollandais ! » au terme
d'une négociation tendue...
Dire qu'il fait partie des meubles de la
maison Delta serait réducteur, mais il y
effectue la quasi-totalité de sa carrière.
Embauché par Jac van de Plasse, alors associé à son frère Wim, patron actuel de Delta
Mossel, Olivier débarque à 28 ans dans ce
village du sud des Pays-Bas. D'acheteur
de surgelés pour la société norvégienne
Allum, basée à Capécure, il devient assistant commercial pour vendre des moules
de Zélande en France.
Au fil des ans, soutenu par toute une
équipe, sa capacité d'écoute, sa réactivité,
sa bonne humeur légendaire et sa capacité à arrondir des angles commerciaux,
parfois aigus, ont sans nul doute contribué
à construire la notoriété de Delta Mossel,

dans le grand nord-est de l'Hexagone et les
autres marchés qu'il suit.
Souvent désigné directeur commercial,
il est bien plus que cela dans cette société
sans titre rigide, de taille humaine, où il
apprécie la confiance et l'autonomie que la
famille van de Plasse lui a toujours apportées. Il est en quelque sorte le grand frère
des quatre enfants de Wim, son patron, qui,
à 63 ans, envisage de transmettre à ses fils
et fille Delta Mossel, un bébé créé en 1978.
Mais que serait cette belle carrière sans
la chaleur d'une autre famille, décisive dans
sa réussite à Yerseke : le soir venu, le devoir
accompli, Olivier regagne sa deuxième
maison, celle de Jannie et Kees Sinke, sa
deuxième famille, depuis 1991. Une famille
de pêcheurs de moules, évidemment.
