de maquereau plus basiques. Elles sont
davantage typées « plat principal » et,
surtout, elles se consomment facilement
chaudes. Un double usage volontiers mis
en avant sur le packaging.
Le haut de gamme constitue une autre
piste de développement pour le maquereau. En ayant en tête que cette stratégie a
particulièrement bien profité à la sardine !
Parmi les points positifs, le maquereau d'Atlantique nord-est a retrouvé en mai 2016
l'écolabel MSC (Marine Stewardship
Council), qu'il avait perdu en 2012 suite à
des captures trop importantes.

The "trendy" recipes of Saupiquet
Leader for mackerel sales in chain stores, Saupiquet knows how to dynamize
the market and modernize its offer. Following the plain grilled or marinated
fillets, in June 2016, the brand launched a new offer of three exotic
recipes: Indian flavour with curry and coconut milk, Moroccan
flavour with currants and spices and finally, Tex-Mex
flavour with red kidney beans and sweetcorn.
Ingredients which are rarely associated with mackerel!
But the truly original idea is the possibility for customers
to consume the product either hot by reheating it for
45 seconds in the micro-wave or cold. A range which is
likely to appeal more to younger customers than to the usual
target of tinned mackerel.

The Connétable brand goes
for quality and tradition
A selection of fish caught with a pelagic net, a
traditional preparation in Douarnenez - handmade filleting and packaging - and a careful
choice of ingredients: such are the selling points
promoted by the Connétable brand. "We chose,
for example, to use Muscadet instead of a simple
white wine because of its superior taste," explains Laurence Blanloeil, in charge of
public relations for Maison Chancerelle. To guarantee a tender and tasty fish, only the
Scomber scombrus mackerel, from the FAO 27 area, with a fat content superior to 15%,
are selected.
Maison Chancerelle does not get its supplies uniquely over the November to March
period, when the fish is situated in the Scotland/Ireland area. For 2017, Connétable
reports an evolution of its mackerel range with "superior quality products to satisfy
consumers' expectations", but did not provide more detailed information.

augmenté de 35 % : cette hausse importante et violente est dure à répercuter et la
réaction du consommateur incertaine »,

Compagnie bretonne du poisson). La
pression sur les cours a été accentuée
par un autre phénomène : la faible quantité de petits maquereaux disponibles,
la pêche ayant privilégié les poissons
plus gros. « La flambée des prix, avec des
cours supérieurs à 2 000 euros la tonne fin
2016, rend les négociations commerciales
difficiles », constate Pierre Commère. Or,
la hausse ne peut être absorbée par les
seuls conserveurs. Les distributeurs vont
devoir accepter d'acheter plus cher. Et les
clients aussi !
Pour ne rien arranger, les conserveurs
doivent également faire face à des niveaux
de prix très élevés sur un autre ingrédient
clé, à savoir l'huile d'olive. En juin 2016, le
surcoût estimé était de 30 % par rapport à
juin 2014. Les cours oscillaient ainsi
entre 3 500 et 4 000 euros
la tonne en 2016, quand
ils ne dépassaient pas
2 400 ou 3 000 euros la
tonne entre juillet 2010 et
juillet 2014. Il n'y a guère
de grande amélioration à
attendre sur ce plan, la consommation mondiale d'huile d'olive progressant de 6 % par an. Or, l'offre ne
suit pas la demande. ■

New ways of eating mackerel for the catering industry

The Compagnie Bretonne du Poisson offers a crumble of mackerel with
tomatoes, targetting outside catering. It is used as a culinary basic
ingredient to make salads, sandwiches, lasagnes or mackerel Parmentier.
"The idea is to change the image of mackerel and promote it for collective
kitchens, so that they could prepare it differently," explains Sten Furic, the
general manager of SAS Jean-François Furic. In 2016, the product won
the prize for the best novelty for the catering industry, organized by
Produit en Bretagne. It is indeed an interesting substitute for tuna
and for meat. Outside catering represents 60% of the workload
management schedule of the company which has a turnover of
11 million euros and a staff of 60 employees. If the products of
Compagnie Bretonne du Poisson are not sold in supermarkets,
their tinned fish are a benchmark in delicatessen shops.
