conserverie propose aux épiceries fines, à
sa marque ou à marques propres, rillettes
et soupes de poisson, avec ou sans algues,
condiments, légumes et épices marins,
algues en paillettes, thés... « Face à la
demande croissante, nous créons de nouveaux tartares d'algues, confie son fondateur Michel Perzinsky, qui vend aussi en
GMS. La filière reste étroite et il fallait que
l'on fasse des volumes », reprend-il. D'où
le développement d'une activité de fabrication à façon. ■

Big chain stores are a new outlet

Several processing companies have started to market
seaweed in large supermarkets for the decoration of
seafood counters and platters of seafood. This is still the
case at Bret'Alg, in Roscoff, which is also carrying out
the first processing operation; at GlobeXplore, which
collects 300 tons of fucus and ascophyllum every year; or
at Algoplus, where part of the 390 tons collected is sold to
major fish wholesalers. After having developed their offer
of processed products for specialized channels, they are
widely promoting their products in supermarkets. Thus,
Algue Service has just created three fresh tartars Manon
des Algues which have being tested in Brittany since 2018
in the seafood self-service shelves and in the smoked and
marinated product shelf. Algoplus markets the products
under its Conserverie Sainte-Barbe brand in around
100 independent stores, mainly in Brittany. GlobeXplore
is also already present in supermarkets. "But self-service
shelves represent small quantities, with a low turnover,"
explains Mathieu Isoard, the manager. As a result, the
company will create seaweed bars on the seafood counter.
The fishmonger, trained by his teams, will offer fresh salted
seaweed and recipes will be created for the uninitiated.

La Marmite de Lanig expands its offer
In 2016, Alan Stéphant, a young Breton agri-food engineer, founded his company with his
family in Pont-l'Abbé (Finistère). The idea is to offer ready meals made with seaweed meant
to appeal to the uninitiated. With the support of the Quimper Technopole and the Brittany
region, and the help of the IDmer technical centre in Lorient, five recipes for sea spaghetti,
dulse and karafuto-kombu, combined with vegetables, pulses and cereals, were created in a
few months. Organic, vegetarian, whole and practical products, with their microwave-ready
packaging in individual appertised pouch. "In view of a democratization process, we have
favoured distribution in supermarkets, in the organic department, and
on online sales platforms," explains the
company founder. Another option is to use
low percentages of seaweed (5 to 11,5%)
in the first recipes. But the three new products for 2019 contain up to 15% of them.
Now subcontracted to the Larzul canning
factory in Plonéour-Lanvern (Finistère),

À Roscoff, Algue Service propose à sa
marque Bord à Bord, pour les magasins
bio et la RHD, une large gamme de tartares d'algues frais, des moutardes et une
mayonnaise aux algues, ainsi que des
algues salées. « Nous avons élargi notre
gamme sèche composée de confits et de
chutneys vendus en magasins bio avec
des biscuits apéritifs dans le but d'intéresser les épiceries fines, note son dirigeant
Henri Courtois. Un circuit plus difficile
d'approche avec une gamme spécifique
et du fait de l'organisation nécessaire
pour le transport en frais. » Et l'entreprise
se lance aussi en GMS sous la marque
Manon des Algues.
Implanté à Rosporden (Finistère),
GlobeXplore (groupe Jean Hénaff) est surtout présent en RHD à la marque Algaé
Gastronomie en frais (algues salées,
algues marinées, salades, beurre aux
algues) et en ambiant (épices, soupes de
poisson aux algues, sauces, condiments
et aromates, pâtes...). La GMS est son
second marché, suivie par l'épicerie fine,
à la marque Christine Le Tennier, du nom
de sa fondatrice. Lancement récent dans
cette gamme, les Tartares de Mémé associent légumes anciens et algues. Quant à
la marque Algaé Nature, elle est en cours
de lancement dans les réseaux bio.
