Oméga 3 :
riches et savoureux
Enrichir les produits alimentaires
classiques en oméga 3 afin
que les consommateurs puissent
absorber au quotidien les 250 mg
recommandées par l'Efsa (Autorité
européenne de sécurité des
aliments) : c'est l'axe de travail
de Polaris, société bretonne
dédiée depuis 25 ans à
la valorisation des lipides
fonctionnels issus des coproduits
marins, mais pas seulement.
Lancé en 2018, le programme
Sensory, basé sur la microalgue
Schizochytrium sp, fermentée
en Europe et raffinée en France,
lui a permis de proposer des huiles
aux propriétés organoleptiques
particulières. « Nous avons un
profil unique en France, détaille
Louis-Marie Martin, directeur
commercial, car nous maîtrisons
le sourcing, les process et les
formulations. Cela nous permet
d'offrir des solutions pour ce
que nous estimons être l'enjeu
de demain : élaborer des produits
neutres. » Une bonne base pour
intégrer DHA et EPA dans des
chewing-gums, céréales, pâtes,
pains et autres plats préparés. Le
goût doit en effet être parfait,
débarrassé de toute odeur ou
saveur éventuellement tolérée
dans les produits purement
nutritionnels ou les compléments
alimentaires. Des tests de
validation sont en cours sur divers
produits avant
la commercialisation.
Dès 2005, cette société affirmait
son savoir-faire dans le domaine
des biotechnologies en brevetant
Quality silver, un process de
stabilisation des huiles polyinsaturées qui retarde les effets
de l'oxydation et préserve
les qualités organoleptiques
et nutritionnelles.

Sysco France, enthused about FIP
A Fishery Improvement Project
(FIP) for the legendary cod
of Newfoundland and Labrador
is under way. Sysco France
is one of the partners
in the working group.

n 2009, Davigel, a specialist in professional frozen food services, opted for
sustainable sourcing. A sizeable proportion of the products marketed by the company are eco-certified MSC, GlobalGap,
ASC, Best Aquaculture Practices and
organic. To go a step further, in 2015,
Davigel committed itself first to the Fishery
Improvement Project (FIP) for the ray from
New England, and then to two others,
the Argentine red shrimp and the famous
Newfoundland and Labrador cod. Sysco
France, born in 2018 from the merger
between Davigel and Brake, is in line with
these commitments, particularly on cod.
"Most of our offer on this species currently comes from the North-East Atlantic,
Russia, Norway and Iceland," says Laurent
Froget, market manager. "But 9% are
caught in Newfoundland by coastal fishing boats which are still authorized, while
the famous deep-sea fishery has been
under a moratorium since 1992. We
wanted to go a step further."
The FIP created working groups. On the
fishermen's initiative, they bring together
producers, scientists, authorities, buyers
and NGOs with the aim of drawing up
a precise survey of a fishery with a view
to sustainable exploitation. Sysco France's
commitment has made it possible to carry
out a genetic study for the first time and
very recently, to buy acoustic markers and
receivers. The monitoring of tagged cod
for at least five years will provide a better
knowledge of their migration pattern and
of the evolution of stocks.
On 28th of February, an intermediary report on this FIP dampened the first
hopes which seemed to indicate a return
of cod. "The expected restocking was
22%, but scientists estimated it at only
7%. Natural mortality is put forward as
a cause, due in part to the absence of
capelin and shrimp, which are part of the
cod diet. But it is not a disaster, because
nobody could imagine a straight-line

reconstruction process without peaks and
drops," Laurent Froget says. But Sysco
France is not deterred by these results.
Its implication in the FIP makes it possible to strengthen its partnership with
the fishermen and to secure privileged
access to the resource when the stock is
replenished. Besides, Sysco France wants
to meet new challenges and develop
new FIPs with its partners, SFP and WWF
France, for its main products which are
not eco-certified yet. Knowing that certification is generally a natural result of FIP.
An ever more inescapable key to international markets.
