France are neck and neck for the production with quantities between 30,000 and
42,000 tons: the Italians mainly produce
portions while the Danes and the French
are more orientated towards breeding large
rainbow trout. Sweden is following the
same path with 9,000 to 10,000 tons of
large fish. "Some countries such as Poland,
Romania and Bulgaria are emerging production centres," observes Éric Mezrich,
sales manager at Aqualande.
"Generally speaking," he continues,
"European producers target their domestic
markets as a priority. This is particularly true
in Italy and France. In contrast, Germany,
which consumes a lot of hot smoked trout,
imports quantities of Danish trout. To a

lesser extent, Spanish trout enters France
with identical production schemes, as a
complement to French production. Even if
the Turks are gaining ground on large trout
production, competition is not a problem."
Poland is the largest centre for salmon
smoking plants in the European Union and
is the second largest importer of trout after
Germany. Raw material imported mainly
from Norway and processed in the country is re-exported, particularly for private
labels. With a price limit though because
Norwegian trout weighing 3 to 4 kg is an
expensive product, closer to salmon than
freshwater rainbow trout, which is known
to be less fatty.

armed at sea, more rarely in lakes,
but more often in basins, including far inland, rainbow trout
is happy on the Old Continent.
Although its origins are American, this
farmed trout is part of the culinary culture
of the most continental part of Europe
up to the borders of the East, and including Scandinavia. It is no wonder that this
species, a favourite of European fish farmers, is gaining ground in the wake of
salmon success.
Over the last decade, European production has fluctuated between a low of
338,000 tons in 2010 and a surge of over
390,000 tons at the end of the period.
Changes in the cutting and smoking market are prompting fish farmers to produce larger fish. This trend is confirmed
by the continuous growth of the production of large rainbow trout, which exceeds
150,000 tons. Conversely, portion trout production is declining to around 233,000 tons,
although it is still well established in consumption habits, particularly in continental
and southern Europe.
Largest producing country with more
than 100,000 tons of trout portions,
Turkey is entering the large trout segment
with more than 5,000 tons. However, it is
far behind Norway, whose production of
large trout produced at sea ranges from
50,000 to 85,000 tons. Italy, Denmark and
