Pour l'instant, la nouvelle filière, estampillée par le programme de consommation
durable Mr. Goodfish, est le fruit d'un partenariat entre quatre acteurs des Hautsde-France. L'entreprise biotechnologique
InnovaFeed, dans le Nord, est l'inventeur de
la nouvelle source de protéines provenant
de l'élevage de mouches (Hermetia illucens).
« Nous les nourrissons avec des coproduits
issus de l'agriculture locale et donc peu
onéreux, puis nous séchons et broyons
les mouches pour les réduire en poudre,
au rythme d'une tonne par jour, détaille
Guillaume Gras, cofondateur d'InnovaFeed.
Et nous ne générons aucun déchet puisque
les déjections sont réutilisées comme amendement organique. » Après un premier site
de production pilote à Gouzeaucourt (près
de Cambrai), un site dix fois plus performant
(10 000 tonnes par an) est attendu fin 2019
à Nesle (Somme), à proximité immédiate de
l'amidonnerie Tereos, acteur majeur dans le
domaine des protéines végétales.
La poudre d'insectes est ensuite envoyée
chez Skretting France, dans l'Aisne. Le leader mondial dans le domaine des solutions
nutritionnelles pour l'aquaculture remplace
50 % de farine de poisson par de la farine
d'insectes.
Le transformateur Truite Service, avec
son réseau de sept piscicultures dans les
Hauts-de-France, est le troisième maillon de
la chaîne. Auchan, le quatrième. La truite
Filière Auchan sera disponible partout en
France avant Noël. Un site internet (nourrialinsecte.com) assure la pédagogie de cette
innovation auprès des consommateurs.

Founded in 1993 by three fish farmers in the Hauts-de-France region, Truite Service
processes annually 1,200 tons of fresh trout at its plant in Loos-en-Gohelle, near Lens:
in portions, steaks or fillets. Due to its strong growth, production will be automated
to make it more fluid while improving the working conditions of its twenty employees
as well as animal welfare.
Managed by Laurent Terninck since September 2017, it is supplied daily by seven fish farms
in the Pas-de-Calais, Somme and Aisne departments, which ensure supplies all year round
in both quantity and quality.
"In 2016, we bought a fish farm in Douriez, on the banks of the Authie, to supply us with
trout weighing more than 2.5 kg, which is more suitable for steaks and smoked trout,"
the manager says. "We are five partners, including four producers, and we all are
on the lookout for any innovation. That's why we immediately joined the
insect meal-fed trout project." Other major retailers may soon join Auchan.
"About 65% of our global production is sold in chain stores," Laurent
Terninck says. "The complement goes to French and Belgian wholesalers, fishmongers and processing companies, particularly those in the fish
smoking sector."
For exemplary traceability, producers are required to monitor the batches
bred in their tanks by keeping an up-to-date breeding register which can
be checked at any time by the veterinary services. This register makes it
possible to know the history of each batch: identification of the basins,
feeding, handling carried out (sorting, care, veterinary interventions...),
length of stay, etc.
As soon as the trucks arrive at Truite Service, each batch of trout,
which have been fasted for two days, is immersed in one of the four
tanks, each with a capacity of 4 tons, awaiting processing operations:
gutting, automated filleting, manual trimming and packaging.
"In just a few hours, the crates are ready to be shipped to meet orders
received that very morning. There are three departures a day,"
explains Laurent Terninck, "two for the Boulogne-sur-Mer centre,
one for the Rungis market."

Rohart fish farms: from the basin to the plate
President of the syndicate of fish farmers of the North of France, LouisAndré Rohart owns two farms in the Arrageois region where he
breeds brown trout and rainbow trout. "Founded in 1923 by my
great-grandfather, the Anzin-Saint-Aubin fish farm is the first to
have settled in France. The other farm is in Etrun. While supplying
a third of my production to Truite Service, I export to Germany,
Belgium and I also sell to fishing trips, very popular in the Hautsde-France region, restaurants and various local retailers. Since 2015,
I have also opened a fish shop a few steps from the breeding tanks.
In addition, I have a processing and smoking laboratory that makes
boneless and skinless fillets, skewers, steaks, roasts, sausages and
carpaccios. A fish freshly caught the same morning and sold
only a few metres from
the fourteen breeding tanks!"

Auchan Faches-Thumesnil, près de Lille, en
décembre.
« Après des premiers tests en juin 2018 et
un retour très positif à notre enquête clients,
explique Béatrice Javary, responsable RSE
d'Auchan Retail, nous avons décidé de lancer ce produit dans nos magasins du nord
de la France. Il s'inscrit dans notre volonté
de développer une filière aquacole française
durable. De plus, c'est une solution 100 %
naturelle puisque les truites à l'état sauvage raffolent des insectes et se pêchent à
la mouche. »
