Considered one of the world's ancient spices, cardamom is a member of the ginger family that's celebrated for its warm, spicy-sweet flavor. It's native to India, but thanks to the Vikings, it's Scandinavia's favorite spice. A thousand years ago, the Vikings discovered cardamom on the spice trade routes in Constantinople and brought it home. Today, it's a staple in Scandinavian baking. Whether you like to use cardamom in pod form, seed form or ground, it elevates savory and sweet dishes. Viking enlisted the help of Norwegian-American recipe developer and food stylist Betsy Nelson (thatfoodgirl.com) to showcase how to use this versatile spice.
