cultural occurrence or a moment. Then,
you try and add a layer of something
more. It's the same with the restaurant
as well. You start with the food, the
drinks, the service, and you add other
things on top of them, such as interest,
excitement and novelty. What's the
purpose of eating? To fuel our bodies,
but we also take pleasure in eating.
With photography, it's kind of the same
thing. The purpose was to supply the
viewer with the information of the
moment that I photographed, but they
also have something more.

Viking: How long have you been
photographing?
Magnus: I got my fi rst camera when
I was 6 or 7 years old, I found one of
those Kodak Instamatics in a cupboard
at my grandparents' house. It was the
kind you take the fi lm out, put it in a
bag, and send it off by mail. I've been
photographing since. " The Nordic
Cookbook, " was the fi rst time the
photos were used for something.
Viking: Many Americans have relatives
they can locate in Scandinavia. Do you have
relatives who emigrated?
Magnus: Yes. I have family in
Chicago. My parents have met them,
but I haven't yet. Here, everyone
has relatives in the United States, or
knows people who went for awhile
and returned home, bringing ideas or
new traditions. There's an obvious
interest in the culinary identity of the
ancestral regions people came from.
A lot of the traditions, especially in
Norway, are in an unbroken thread for
hundreds of years. And I'm so happy
to get them into the book before those
traditions are forgotten. If you go
to somewhere like England you fi nd
most of the old ways were forgotten
in industrialization. I feel so lucky that
isn't always the way here.
