Nordic Cuisine
Island chefs are making a name for themselves as part of the
Nordic food revolution - but with a flavor profile that is
distinctively Faroese.
" More and more people travel for our food, " says
Sørensen. " Faroese chefs are re-inventing our traditional
food - which we have always said you have to be born and
bred here to like - so that foodies from all over the world
travel to the Faroe Islands to eat. "
One such chef, Poul Andrias Ziska, is drawing attention
on the Islands and abroad. His restaurant, KOKS, was
recently awarded the Faroe Island's first ever Michelin Star.
Ziska earned the restaurant world's high honor by being
" uncompromisingly Faroese. "
" We have a goal to be 100 percent self-sufficient from our
islands, " he says. " We try to cook everything that's around
us here and try to make it delicious. Everything from what
we have in the sea and in the mountains and all the herbs
and seaweeds that we forage ourselves. We try to fill up our
fridges and storage spaces with everything what we have
around us. "
One way to do this, along with foraging and growing their
own produce, is by highlighting a uniquely Faroese method
of fermentation known as ræst. " The special thing is that it's
a very uncontrolled process, " says Ziska. " We don't add salt
to our meats or smoke them or control them in a refrigerator.
It's just hung out and left to ferment. "
The cool, salty Faroese air produces fermented lamb with a
rich, umami flavor with tangy notes not unlike blue cheese.
While Ziska and other Faroese foodies stay true to their
roots, they're making the Faroe Islands a true culinary
destination for tourists while changing Faroese ideas
about food.

invite people into
their homes for
intimate meals.
" It has evolved a lot...the food culture and also the
café and restaurant culture, " says Ziska. " For the older
generation, they don't use money on foods really, at least not
on dining out. But I think this is starting to change. "
Restaurant culture is a new phenomenon for Faroese
natives, in part because it was illegal to serve alcohol in
restaurants until 1992. People still frequently dine in the
homes of friends, family and acquaintances. The concept
