INTRODUCTION The final part of this investigation was to bring together industry experts to operationalize the findings of the earlier parts of the research. The first part of any investigation should be to learn what the stakeholders value. Far too often, this is as far as researchers take it. This final think tank piece is part of what makes this project unique and valuable, as the team engaged thought leaders and industry experts to identify and discuss strategies for how the findings can be implemented in the college and university foodservice environments. METHODOLOGY The NACUFS team leveraged their network to identify and recruit 36 industry professionals and thought leaders spanning different areas of expertise: contract foodservice providers, self-operated foodservice providers, foodservice technology providers, facility designers, and academics. Six teams were built intentionally to ensure a cross-section of participants with different expertise so that multiple perspectives would be represented on each team. The participants were assembled at Florida International University's Biscayne Bay campus for this one-day thought exercise event. The day was divided into six discreet sessions. In each session, relevant findings were presented; the participants were then given specific thoughts and questions around which they would ideate within their teams. Finally, the teams would report their findings to the group as a whole for a final discussion. 84
