students, we must
nurture each of
their strengths, as
well as develop
other necessary
skills.

service, and clean up for a variety of events, ranging
from bartending to cookie and coffee drop-offs. A
prime example of this is student K, who has been
on my staff for the last three years and is now able
to read an event contract and set up the event from
start to finish. When student K started, they were well
versed in food service but not necessarily catering
big events. Student K is now able to train incoming
student employees.
As student employees develop the necessary skills for
leading each type of event, the skillset of the
catering team vastly expands. While the student
employees are only with us for a short period of
time, they transfer their knowledge to our new pool
of employees every year. This leads to a successful
flow of operations without gaps in leadership and
development.
Another piece of the puzzle for talent management in
catering service is planning. The management team
must be able to know their team inside and out,
so they know who and when to schedule for each
event, as well as how big of a team needs to be at
each event. To be more specific, say there are two
breakfast services, as well as an evening reception.
Management needs to know who to schedule early
and who will be scheduled late, as well as ensure
there is enough additional staff for the evening
reception. Within this planning method there must
also be room for something to go wrong. As we all
work in food service, we know that sometimes we can
be short-staffed. When setting the number of staff for
each event, it is always important to build a buffer to
account for call-ins and any other unexpected staffing
outcome.
Knowing one's staff is an important piece in every
level of food service. However, when it comes to all
the moving parts of an event, talent management is a
vital piece of the operation. Without the knowledge
and skillset each individual brings to a team, any
operation would cease to exist. One must have a team
built with a wide range of qualifications in order to be
successful. ยง
