Revising Food Allergy
Communication
Without question, the previous year has been
one composed of exigent challenges, unique
situations, and indescribable hardships. With
such public pressure placed upon health, now
seems like an appropriate time to double down
on standards and procedures to ensure personal
health, as well as that of others. Tara Jones, registered
dietitian nutritionist at Montana State University, led
a new expedited methodology for avoiding foodbased allergens in all operative kitchens and halls. On
a weekly basis, line cards are created to accompany
each dish prior to it being served publicly. Detailed on
the cards are the name of the dish, the recipe catalog
number, the location of where it will be served, if the
dish meets a particular diet, and possible allergens. By
having each student list and submit known allergens
prior to signing up for meal plans every semester, the
nutritionist and chefs are able to pull that data and use
it in order to create specialized meals for individuals
with dietary restrictions. While analyzing and identifying
food allergens will always be a challenge, the FARE
Food Allergen Audit has greatly assisted Montana State
University in meeting the needs of students, as well as
creating accountability.

Starting off with the physical elements of
your presentation and how lighting, surfaces,
and shadows play a crucial role in setting up
the foundation for the pictures, Guralewski
reviewed how to identify which angle best
suits your food. She also explained how a
variety of surfaces can alter the aesthetics of
each item (i.e., home-cooked meal vs. five-star
restaurant appeal).
While there is much you can do yourself, the
final touches to your Instagram-bound photo
can only be handled by some of the latest
features added to the iOS camera. These
features include cropping, portrait settings,
and brightness. With the proper techniques
and tools, you too can capture the perfect
essence of your unique culinary skills!
