500 meals were donated to various shelters
and the surrounding, minority populated
Third Ward.
Additionally, the University's student-led Food
Recovery Network collects surplus perishable
food items to donate to organizations and
people in need, thus recovering what would
potentially have become waste. Now underway,
the University's senior executive chef, Chad
McDonald, is seeking to host a teaching kitchen
with the campus pantry, Cougar Cupboard,
to arm food insecure students with tasty food
preparation ideas. Concomitantly, UH Dining
hosts its own farmers market where artisans sell
homespun wares, and students support local,
small business owners. Set to participate at
the market, the pantry will offer staple items to
students in attendance, strategically bolstering
the program's publicity and accessibility.
With consideration of the ethnically diverse
student population served, among other
culturally relevant meals, halal beef, chicken,
and lamb are served at both of the University's
dining commons. To Ralph Waldo Emerson's
statement, " Every natural action is graceful. "
We " Coogs " concur, skipping the straw,
demonstrating cultural sensitivity, and issuing
over 200 passes to food insecure patrons
each semester.
In all, " the journey to a more sustainable future
begins with me. " Were this adage heartily and
unanimously owned, a greener and cleaner
future would be far better secured for future
generations. UH Dining seeks to embody this
maxim, as we believe, for the aforementioned
reasons, is self-evident.
Data collected over a one-year
period reveals more than 29 tons
of waste have been salvaged by
composting efforts.
