2023 RESIDENTIAL DINING FACILITY

MORRISON DINING
Named after Cornell alumna Toni Morrison, MA
'55, Pulitzer- and Nobel-winning author and poet,
Morrison Dining is intended to bring students and
the campus community together with menu items
that are fresh, nutritious, and sustainably sourced.
With 11 individually themed platforms offering
a wide range of new and traditional culinary
experiences, the space was created to be flexible,
with open-concept cooking platforms that educate
as well as entice.
Morrison Dining is designed to echo a busy
city street, with large floor-to-ceiling windows
promoting natural light in a spacious, open
setting. More than 125 dining team members and
50 culinarians work in the facility from a variety
of backgrounds and specialties, contributing to
culturally authentic flavors and concepts.
Morrison Dining's layout and presentation creates
a transparent dining experience where guests can watch the cooking process
from start to finish. The dining room is divided into four quadrants, each with
its own personality. One of the four quadrants, the east Side Market, showcases
a vegan and gluten-free platform and displays vintage cooking tools and nods
to handmade infusions, shrubs and oils. The West Side Grill features an open
platform with global cuisines, a wood-fired grill, rotisserie ovens, a wok and
iron grill, and plancha. The iron grill is 8 feet long with over 50 sq. ft. of cooking
space. The North end features house-made pasta and two gas-fired rotatingdeck
pizza ovens heated to 900 degrees, which can cook a made-to-order
pizza in less than 2 minutes. The team at Morrison makes up to 400 pizzas per
day and can produce 130 pounds of fresh pasta in one hour. Meanwhile, on the
South end, diners can find sweets, including waffles, crêpes, and Cornell Dairy
ice cream, a partnership with Cornell Agriculture and Life Sciences.
Special dietary options are available including gluten-free, dairy alternatives,
low-fat, vegetarian and vegan selections, while allergen labelling is prominent
for all food items, along with labelling of pork and alcohol. Two adjacent
stations for students with religious dietary needs offer certified Star-K kosher
with regular mashgiach oversight and Zabiha-certified halal cuisine prepared in
accordance with World Halal Council standards.
Morrison Dining also incorporates learning and academics by way of a fully
visible food lab, the Discovery Kitchen, which operates within the heart of the
facility. Large glass walls allow diners to sit just feet away from classmates
completing credited coursework or learn from culinary events broadcast on
the Tv monitors. This lab is a living partnership between Cornell Dining and
Cornell's Division of Nutritional Sciences with special events and credited
coursework on display to diners throughout the day.
