STRATEGIES FOR SUCCESS IN
THE EVOLVING C&U FOOD MARKETPLACE
With myriad factors impacting global food supplies in an ongoing
post-pandemic recovery, it's a good time to evaluate fluctuations,
renegotiate prices, and stay flexible in the college and university
food marketplace, according to experts in a panel discussion
entitled, " Navigating the Changing Landscape: Insights and
Strategies for Success in the C&U Food Marketplace, " a super
session at the NACUFS 2023 National Conference.
" There is no better time than now to know your food and
understand how world events, whatever they are, could have an
impact on your menu, " said moderator Zia Ahmed, senior director
of dining services at The Ohio State University. " We probably need
more flexibility in our menus than ever before. "
In terms of supply chain disruptions, order fulfillment rates are back
to pre-pandemic normal, but there are exceptions, according to
Jane Bullinger, region vice president of national sales at US Foods.
" We are well north of where we were last year with fill rates, which
was 89 percent, " Bullinger said. " That doesn't mean you're not going
to face pop-up issues. "
Disruptions like weather, cybersecurity, packaging constraints, fires,
labor strikes and more have - and likely will continue - to affect
product availability, which can temper recovery, she explained.
Beef is one area of concern, with herds down by approximately 3
million from 2019 levels due to inflation and other causes, Bullinger
said. expect higher prices through 2024.
This trend is due to liquidation of herds over the last several years,
