general, and the security of their jobs. dining met daily with
a university-wide response team to obtain regular updates
on the status of Covid-19 and general university operations
so we could apply our plans and phased approach to our
operations. during this time, we kept our team members
on staff full-time as we worked to deep clean and provide
food services to students who remained on campus. the
dining team worked together to help keep spirits high and
promote a strong team effort. Jayquan Coley, a University
dining Services team member, said in May 2020, " i miss
my students. i'm used to a big crowd. that's what gets us
going. " there came a point where, as a team, dining had
to make the difficult decision to reduce operations. Cam
Schauf, director of campus dining and auxiliary services,
made every attempt to retain staff for as long as possible
while our team determined the best road forward. difficult
conversations (including furloughs and ending temporary
assignments) were very challenging and emotional for our
team to deliver.
the unexpected halt also created challenges with the

provide variety and some
much needed fun.
large amounts of food and supplies on hand. We had been preparing for
numerous upcoming campus events and gearing up for a return from
spring break, and our inventory levels reflected that. our team wanted
to help the local community, especially in this time of need, and with a
nationwide supply chain crisis causing supermarket shelves to remain bare.
our university operates Kosher Comfort a full-service kitchen in douglass
dining. With Passover right around the corner, the team had just received
large orders for Kosher Comfort and retail items at our campus c-store.
With much of the university population off campus, our team jumped into
action and prepared truckloads of products-both packaged goods and
whole meal solutions-and partnered with the Jewish Home in Rochester,
new York. " it felt great to give back to the local community and turn a
problem into an opportunity to assist families in need, " said hospitality
services assistant director Jeff Weis, douglass dining. As a collective group,
University of Rochester dining donated over 300 food boxes to the local
Jewish community.
the dining team continued to pivot and manage through day-to-day
operations, often turning on a dime to meet the needs of students in
quarantine by delivering isolation meals, adjusting seating and signage in
locations, and helping to monitor safety protocols throughout all campus
locations. during this time, we were faced with challenges surrounding
staffing, food supply issues, and team member hardships. team members
dealt with the loss of family members due to Covid-19, a wide array of
Covid cases throughout their families and community, and other mental
health issues surrounding the difficult days of the pandemic. our dining
