Students, fighting the growing lethargy of online
learning, seek the stimulation that coffee naturally
provides them. According to the national Library of
Medicine, 92 percent of students consumed caffeine
prior to the pandemic. of those, 74 percent drank
coffee in the morning, with at least 26 percent of
students opting to study in coffee shops at least once
a week4
. this earlier research on college students'
consumption habits flows into overall trends seen in
the industry emerging post-pandemic.
Kali Stiles, a barista formerly from a college town
in Colorado and now in the college town of ithaca,
new York, has noticed over the past year that her
customers seek more uniquely built drinks, like those
including lavender and fruits5
.
Lattes, chais, and matchas are growingly in demand.
Also, although most coffee shops are unable to
create cold/nitro brews, college students are seeking
these more and more in search of easy, convenient
refreshments. Additionally, Kali's observations
of customers, particularly those of college age,
align with the 2021-22 statistics about growing
consumption and deliberately seeking out coffee
shops. Her notes the virtual instruction emerging from
the pandemic and students' need to socialize and
feel connected are the main impetus for this growing
trend. Kali says, " they seek a creative and connective
environment where they can spend a significant
portion of the day due to online classes and work. "
these observations concur with those of prominent
coffee industry sales representatives, who concluded
this fall, notice the class of 2026 proudly
marching into their dorms with coffee
makers in hand, refrigerators in tow (for
their cold/nitro brews and specialty iced
coffees), carefully cradling a variety of
Etsy-crafted coffee cups, and wearing
t-shirts proclaiming " Keep Calm, drink
Coffee, and Keep on Studying! " As they
are running into a coffee shop that first
week to order their lavender/blueberry
creations, bystanders may shake their
heads. Consider the saying, " First they will
laugh. then, they will copy. " Regardless of
changing trends, humanity will always run
on coffee!
due to lingering Covid restrictions
and the current fiscal climate, there is
a definite shift to home brewing and
consumption. in turn, trends point to the
increase of the class of 2026 bringing
more home brew coffee makers to their
college residences.
as early as 2018 that many overall
consumers were seeking to explore
new formats and flavors of coffee, with
novelty and convenience driving this
trend. this has also led to an increase in
easily purchased cold brews, especially by
college students6
.
