2022 RESIDENTIAL DINING: FACILITY
GRAND PRIZE:
Tufts University
With the vision to provide students who suffer from food
allergies the same feelings of safety and belonging that
non-allergy students have when dining on campus, tufts
University converted one of their two residential dining
centers into a gluten-, peanut-, and tree nut-free facility-
Fresh at Carmichael.
the menu features diverse global flavors, merging
italian, Asian, African, American Southwestern,
American Southern, and Latin American cuisines.
the dishes balance comfort food and upscale
dining while focusing on true inclusion and using
sustainably-sourced local ingredients. Lunchtime
favorites include southwestern macaroni and
cheese, pizza, jambalaya with brown rice, beef
stew, fish tacos, and barbecue beef brisket.
Build-Your-own bars offer students variety and
customization for dinner with weekly specials,
including a nacho bar, a mediterranean bar, and a
ramen bar.

the facility is open seven days a week and provides
breakfast, lunch, and dinner.

in collaboration with the Student Accessibility and Academic
Resources Center, a nutrition specialist provides support for
students with food allergies and other dietary restrictions. in
2021, Food Allergy Research & Education (FARE) presented
tufts dining with its Best Campus dining Award for its
efforts to increase the ease with which students with food
allergies can dine on campus.
Student advocacy and collaborations between
tufts dining and the university's academic
programs have brought forth innovative
sustainability initiatives. Since 2015, tufts has
partnered with a local non-profit to reduce edible
food waste on campus through packaging and
redistributing meals to community residents
experiencing food insecurity.
Fresh at Carmichael will soon be certified free from gluten,
peanuts, and tree nuts by Kitchens With Confidence, an
independent accreditation/certification entity founded
to help dining facilities become safer for diners with food
allergies. ongoing training and reviews of protocols, policies,
and the food path from transport to delivery ensure the
operation stays free of allergens. this includes the loading
docks, prep space, and storage and serving areas.
