" Joining friends and classmates for meals is an integral
aspect to being a part of the community and feeling a sense
of belonging, " Rosenberger said. " Those with food allergies
and other health issues that require accommodations need
to feel safe and should have a variety of options to choose
from, as does everyone else. "
7. Building rapport with students
Having meetings with students can help them navigate their
options, opening space for feedback on how to improve
inclusion and accommodations for those with food allergies.
" We are continuously asking and listening to input from
our students, " Svennevik said. " This year we are hoping to
expand our offerings of commissary items by starting a pilot
gluten free commissary line of several items that are made in
Kissam Kitchen, which is certified gluten free by MenuTrinfo. "
8. Third party certification and
onsite auditing
Partnering with an outside organization and having a
certifying third party can increase trust and confidence
in any program. Auditing a facility's policies and
procedures around storage, ordering, receiving,
preparation, and service is crucial to avoid allergen
introduction into recipes and operations.
" Continuous reinforcement and consistency in protocol
for teams is important, " Gandara said. " One way to
do this is by working with partners like MenuTrinfo to
ensure we are meeting best practices for food allergy
safety and accommodations. "
Rosenberger noted that this fall, Dartmouth is opening
a new station at their largest dining hall on campus,
the 1953 Commons, called " Certified Free From the
Major 9. "

The University of California, Davis (UC Davis) Student
Housing and Dining Services (SHDS) excels because
the needs of their diverse student population are at
the forefront of every decision. Taking advantage of
every opportunity to make students feel included and
celebrated is essential, and religious holidays are no
exception.
Over 13,000 students lived on UC Davis's campus in
the fall of 2022, each of which were offered access to
three on-campus dining commons located within each
residence hall area. With such a large live-in student
population, groups of students observing religious
holidays and thus requiring dietary accommodations
became quickly apparent.
Director of Residential Dining Felipe Becerra said this
issue is relevant to the university's mission and values.
" We focus on providing dining options for our residents,
not only because we operate and make decisions based
on our mission statement: 'Provide a dining experience
that is the least stressful and most enjoyable part of
our students' day!' " Becerra said. " But also it is the right
