Winter is a promise ! Winter is really here! In St Petersburg, where the river and the canals are frozen, they say at this time that the Neva is asleep and she is dreaming! Winter is a time for rest for the earth and all those who look after it... The farmer, who rises with the sun, takes advantage of the shorter days and can take a breather. There is the spring wheat and barley to sow and the fruit trees and vines to prune... Slowly the wine of the same year is decanted into large vats in the back of cellars. The beasts are in the stables, and if the hay is good, the milk will be full fat! The earth is quiet, but is she sleeping? Yes and no! Everywhere there are organisms whose job it is to reorganize the ground, for new beginnings. Winter is a necessary asset... The cold allows the destruction of certain insects and overall it helps the vernalization (the dormant process which allows a plant to set off on its way to produce and a seed to germinate and flower)...
