Fresh to the Table
It was Napoleon Bonaparte who said, "An army
marches on its stomach." The same could be
said of college students, which means that the
responsibility of keeping them fortified for their
studies falls on housing and dining operations
on campuses around the world. According to
the institutions that responded to the 2018
Campus Housing Index survey, to meet this
demand 75 percent contract with an outside
dining operations management company
while 24 percent self-operate. Similarly, on 76
percent of the campuses, dining and housing
are not in the same department, 16 percent of
them are, and 8 percent are only partially in the
same department.
Managing these operations - as well as
the expectations of the students - has only become more complex in recent years as a greater emphasis is put on health and sustainability
concerns. As an example, the median percentage of food purchases sourced locally was 15
percent. Among the food items campuses said
they purchased locally, 85 percent listed produce and 74 percent said dairy. Other items
included baked goods (66 percent), grains or
grain products (39 percent), and fats or oils (27
percent), with only 11 percent saying they do
not source any local products.
