Q: Why did you think it was important to
write a 2nd edition of the book?

Amy Riolo
As an award-winning, best-selling,
author, chef, television personality,
and educator, Amy Riolo is one of
the world's foremost authorities
on culinary culture. She is known
for sharing history, culture, and
nutrition through global cuisine as
well as simplifying recipes for the
home cook. A graduate of Cornell
University, Amy is considered a
culinary thought leader who enjoys
changing the way we think about
food and the people who create
it. Amy is a food historian, culinary
anthropologist and Mediterranean
Diet specialist who makes frequent
appearances on numerous television
and radio programs both in the
United States and abroad, including
Fox TV, ABC, CBS, NBC, The
Hallmark Channel, Nile TV, The Travel
Channel, Martha Stewart Living
Radio, and Abu Dhabi Television.
She also created and appeared
weekly in cooking videos entitled
"Culture of Cuisine" which air on
nationally syndicated news shows
on 28 different channels across the

Edition, my goal is to teach readers to shop, plan,
cook, and enjoy meals the way people in the
Mediterranean region do. I have included many
tips and strategies that can be incorporated into
today's busy lifestyle, and plenty of choices for
readers to enjoy. One of my favorite aspects of
The Mediterranean Diet is that there is not a "one size fits all" daily intake list to stick to.
While choosing from a nutritious and satisfying cornucopia of foods, followers of this
lifestyle plan can decide what they would like to eat and when. For that reason, I have
included a meal planner, menus, snack suggestions and a thorough explanation of how
to use The Mediterranean Diet Pyramid.
Q: Is there a specific, day to day regimen that people need to follow to reap the
benefits of this diet?
No....That's what makes it great. Lots of plant-based foods, seafood and olive oil are easy
for everyone to achieve. Also, the most important lifestyle factors are being physically
active and enjoying meals with others.
Q: What are some tips you would give people who want to start following a
Mediterranean-style meal plan?
First, I would say to appreciate great food and good company and to make both of
those a priority. Next, I would say to plan most of your meals around plant-based foods
- seasonal vegetables and fruits, fish at least 2 to 3 times a week, dairy often and meats
and sweets only sparingly. Try to cook as much food as possible and incorporate the
freshest, best quality foods you can...exercise regularly and get outdoors when possible.
Q: Why is the Mediterranean diet specifically important for people with diabetes?
Because it is full of leafy green vegetables that have a lot of fiber, magnesium and
other nutrients which are specifically helpful to people with diabetes. Plant-based
foods including beans and legumes help people to feel fuller longer. People in the
Mediterranean region have much lower diabetes rates than people in the United States
partly because of the cultural attitudes towards food and partly because of the health
benefits of particular ingredients such as good quality extra-virgin olive oil, seafood, and
vegetables.
Q: In the book you mention the term "with pleasure and health" often. What does
that mean to you?
It is a common Egyptian phrase which is said before eating like "bon appétit" and I like it
because I think that should be our goal, to eat with both pleasure and health in mind!
