Steve's Intoxicated Brunswick Stew was created by retired educator and Vietnam veteran
Steve Scott of Columbus. "I was not satisfied with the Brunswick stew offered at local
barbecue joints and wanted something with more tomato taste. I also wanted a fairly easy
recipe that could be just thrown together, so making it a Crock-Pot meal just made sense,"
he says.

Steve's Intoxicated Brunswick
Stew
Steve Scott, Columbus, Muscogee
County
2 small onions, finely chopped
Several cloves garlic, minced
Cooking oil
12-16 ounces chipped barbecue pork
(smoked Boston butt, with outside cut)
1 cup or more chopped chicken
1 (12-ounce) can beer, such as Coors or
Honey Brown
1 (28-ounce) can diced tomatoes
2 cups diced potatoes
1 small can whole-kernel corn
2 tablespoons Worcestershire sauce
1/4 cup instant tapioca (for thickening; can
use cornstarch or flour, if desired)
2 tablespoons dark brown sugar
2 tablespoons apple cider vinegar
2 bay leaves
1 teaspoon thyme
Salt, to taste

Black pepper, to taste (or red pepper, if
hotness is desired)
Dash ground nutmeg

In a saucepan, sauté onions and
garlic in a small amount of oil until
clear. Pour mixture into bottom of a
slow cooker. Add pork and chicken.
Add all other ingredients and cook
on low for 8-10 hours or on high for
5-6 hours. Note: Can prepare ingredients the night before and plug in to
cook the next morning.

4 large green bell peppers
1 pound ground beef
1/4 cup chopped onion
1 cup cooked rice
1/2 cup shredded cheddar cheese
1/2 cup chili sauce

Hal Meadows of Cuthbert shares his Hal's
Stuffed Bells recipe in the "Vegetables &
Sides" section of the Muscogee County
chapter.
1 teaspoon chili powder
1 teaspoon Worcestershire sauce
1 teaspoon salt

Preheat oven to 350 degrees. Cut
off stems of peppers and discard.
Remove stem end of peppers; chop
stem end and reserve. Remove seeds
from peppers and discard. Cook pepper shells in boiling salted water for 6
minutes; drain and set aside.
Cook ground beef, onion and
reserved chopped pepper until beef
is browned. Drain well and stir in
remaining ingredients. Stuff peppers
with mixture and place in a shallow
baking dish. Bake at 350 degrees
for 45 minutes. Variation: Substitute
rice with 1 cup whole-kernel corn,
drained.
