Poached, chilled fruit is especially good in the summertime. Although pears are a
fall fruit, they're usually available year-round. This recipe will be a big hit with guests.
Choose aromatic spices according to your preference.
This recipe easily will poach four pears. Keep any leftover sauce to pour over
vanilla or banana ice cream. Experiment using some sweet white wine in place of some
of the water.
POACHED CHILLED PEARS
4 cups cold water
1 cup granulated sugar
2 tablespoons sorghum or molasses
1 lemon, sliced
1 cinnamon stick
1/2 teaspoon freshly ground allspice
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon minced fresh ginger
1/4 teaspoon whole anise (or star anise)
2 to 4 Anjou, red or Bosc pears, peeled, left whole
Unsweetened whipped cream, for garnish
Place the cold water in a large, round, shallow pan with a lid. Add the sugar,
sorghum or molasses, sliced lemon, cinnamon stick, allspice, nutmeg, ginger and anise.
Peel the pears and slice a bit off the bottom if you want to serve the pear standing
up. Leave whole, stem intact.
Immerse the pears in the liquid and bring to a simmer. Cook very slowly for about
10-20 minutes, depending on type and firmness. Turn off the heat and let the fruit cool
in the liquid so the pears absorb flavors.
Remove pears with a slotted spoon and reserve. Strain the liquid, removing the

lemon slices, cinnamon and any whole seeds. Return liquid to the pan and raise the
heat to medium. Reduce until the liquid becomes syrupy, about 15 minutes. Pour the
syrup over the pears and chill thoroughly. Serve with a dollop of whipped cream on
the side. Serves 2-4, depending on the number of pears.
This version of the traditional Italian dish uses pristine U-10 (fewer
than 10 per pound) scallops and is a take on a scallop carpaccio served
years ago at Bistro VG (now VG Bistro & Bar) in Roswell.
If you don't like raw scallops, sear them slightly and chill them before
slicing them, then continue with the recipe.
SCALLOP CARPACCIO
6 U-10 scallops
Juice of 1 large Meyer lemon
Sea salt
Freshly ground white pepper, to taste
About 1/2 cup extra-virgin olive oil
About 2 tablespoons minced or snipped Italian parsley and chives
Remove and discard any adductor muscle that may cling to the side of
the scallops. Slice each thinly. Lay the scallop slices overlapping on
2 medium plates.
Place the Meyer lemon juice, sea salt and freshly ground white pepper

in a glass cup. With a fork, whisk in about 1/2 cup olive oil. Drizzle over the
scallops, top with the minced herbs and serve immediately. Serves 2 as an
appetizer or light main dish.
