THE OG BUTTERMILK BISCUIT

1/2 pound plus 1 stick unsalted European butter, frozen*
5 cups all-purpose flour
4 tablespoons granulated sugar
4 tablespoons baking powder
1 tablespoon plus 1 teaspoon kosher salt
2-3/4 cups Banner Butter buttermilk or other high-quality,
full-fat buttermilk
Melted butter for the tops, optional
Preheat oven to 350 degrees.
*European butter is slightly higher in fat (82 percent)
than most butter produced in the U.S. (80 percent).
Vizethann says she freezes the butter for at least
30 minutes before making this recipe so it's easier to
grate. Grate all frozen butter, using a box grater, onto a
sheet tray lightly coated in flour.
Whisk together flour, sugar, baking powder and
salt in a large mixing bowl. Add grated butter and
fold it into the flour mixture with your hands until the
mixture resembles sand. Add buttermilk and continue
to mix with your hands until the dough comes together
into a large ball. (It should be soft and sticky.)
Spray 2 half-sheet pans with nonstick spray. Using
a 4-ounce ice cream scoop or a 1/2-cup measuring cup
sprayed with nonstick pan spray, scoop out biscuits
onto the prepared pans, leaving 1 inch between biscuits.
Bake for 10 minutes, then rotate pans and bake
another 10-15 minutes. Check for color and doneness.
Brush immediately with melted butter, if desired.
Makes 10 (4-ounce) biscuits.
AUNT HATTIE'S BUTTERMILK
CUSTARD PIE

Scant 1/2 cup butter, softened
1-1/2 cups sugar
3 egg yolks
4 tablespoons flour
2 cups buttermilk
Vanilla, optional
3 egg whites, well-beaten
2 standard-depth pastry shells, unbaked
Cream together butter, sugar and egg yolks. Add
Aunt Hattie's Buttermilk Custard Pie
flour and beat. Add buttermilk and stir well. Add
vanilla, if desired. Add well-beaten egg whites,
stirring enough to mix. Pour evenly into unbaked
pastry shells. Bake at 350 degrees for 35 minutes or
until set. Yields 2 pies.
