was in college at the University of Georgia (UGA) in
Athens, taking a mountaineering class with the
university's Army ROTC program in 1988-89!

which was the most fun. Going down the face side was more like walking backward
holding a rope line in your hands instead of true rappelling (where you can bound out
away from the surface) because it was a gradual angle and not a sharp, vertical drop-off
like the boulder.
Those were some of the best times I had in college.
I also would like to give a big shoutout to the wonderful lineworkers who keep our
power running at Altamaha Electric Membership Corp. [based in Lyons] and all their
support staff who help make that happen! Thank you!

Great magazine!
You all do a great job. I've just finished reading my
March 2022 magazine. I enjoyed many articles, as I
always do.
My mother would have loved the feature about
Georgia 4-H. [See " Head, heart, hands and health: 4-H
grows tomorrow's leaders, " page 16; bit.ly/4hga322.] She
joined 4-H in 1916 and helped with it many years after
she was grown, married and a mother. She encouraged all
of us children to join, and we did. Several achieved
awards and ribbons.

I really enjoyed the Georgia Cooks article about
Chef Joe Engelbird and his grandparents because I
enjoy cooking and hope to make some of his recipes.

liked it because they are lifelong residents of Carroll
County, and I am, too.

On Dec. 3, 2019-the 50th anniversary
of its original launch-Capricorn
Studios in Macon celebrated a grand
reopening as Mercer Music at Capricorn.
The original Capricorn-the recording
studio that hosted iconic acts such
as the Allman Brothers and the Marshall
Tucker Band-filed for bankruptcy in
1979, and the building went into a long
decline.
But a collaboration among Mercer
University and several real estate and
economic-development organizations
also based in Macon brought the studio
building back to life. Read " The birthplace
of Southern rock, " starting on page 18, to
learn how Mercer Music at Capricorn is
encouraging new talent while honoring its
musical history.
On page 22 we visit another oldschool
activity that's enlisting new talent
while giving a nod to the past. The game
of chess is currently experiencing a
resurgence of interest among young
and old alike.
Pandemic boredom and the Netflix
series " The Queen's Gambit " often are
cited as causes for this new popularity, but
the reasons are not that black-and-white.
Other driving forces include the desire to
connect with others through one-on-one
competition and an effort to use the game
to help teach life skills to young people.
Read " Checkmate " to find out why
Georgia clubs and organizations are
using this ancient pastime as a gambit to
emphasize that smart is cool.
What began as a single mother's
effort to support her children by selling
chicken salad door-to-door has since
grown into a national franchise that's
headquartered in Vinings. Stacy Brown's
Chicken Salad Chick restaurant now has
213 locations in 17 states and counting.
Turn to page 16 to see how this
Southern-inspired, fast-casual restaurant
chain is promoting one of the South's
favorite dishes while honoring the
company's first principle: spreading joy
and serving others.

T
he kitchen table is the center of
the home. From that table we
are richly fed with the bounty
produced by our state's farmers. We
enjoy popular Georgia products
such as peaches, tomatoes, squash,
peanuts-and the state's No. 1 product,
chicken.
Poultry and eggs are the most
abundantly produced commodity in
Georgia. Georgia leads the nation in
production of broiler chickens (those
raised for meat), with a $3.26 billion
impact on the state's economy in 2020,
the latest data available from the University of Georgia's Center
for Agribusiness & Economic Development in Athens.
Chicken and eggs are very versatile. They can be baked,
fried, grilled and sauteed and fit easily into many recipes.
For many years I spent Sunday lunch with my family
around my grandparents' kitchen table. My grandfather,
Tom, did much of the cooking in their home. He was a lifelong
resident of Carroll County, a veteran, a farmer and an expert at
frying chicken.
Every Sunday he would marinate chicken breasts (with

the skin removed) in buttermilk,
then coat them in salty flour and
pan-fry them in vegetable oil to
produce heaven on a plate. Even
the crumbs were delicious.
The crispy crust and perfectly
golden-browned chicken fried in
his small cast-iron skillet a few
pieces at a time were a revered
delicacy. It was not Sunday lunch
without it. To this day his simple
but delicious recipe is still
unmatched in my mind.
Another favorite recipe,
which highlights the versatile egg, is the classic vanilla-bean
soufflé. A simple egg-custard base flavored with vanilla bean is
blended with whipped egg whites-making the texture light and
fluffy-and then baked.
This month as you gather around your kitchen table,
share special memories of your family's favorite poultry or
egg recipes-and perhaps even try one of those included here.
