Dark Irish beer and caramelized vegetables give this onion soup a rich fl avor.
IRISH-STYLE VIDALIA ONION SOUP
4 tablespoons unsalted butter
3 medium Vidalia onions, peeled, cut into 1/4-inch slices (about 4 cups)
6 small potatoes, unpeeled, washed, cut into 1/2-inch dice (about 1 cup)
3 cloves garlic, peeled, diced
2 tablespoons turbinado sugar
Generous pinch kosher sea salt, or to taste
1 bottle stout or other dark Irish beer (about 1-1/2 cups)
7 cups beef or vegetable stock
Freshly ground aromatic black pepper (Tellicherry or Malabar), to taste
Bay leaf and dried herbs (such as thyme, oregano and marjoram)
Garnish, if desired: For each bowl, 1 slice of toasted French bread topped with
2 tablespoons shredded Irish cheddar cheese, melted under the broiler
In a large stockpot set over medium heat, melt the butter. When the

foam has settled, stir in the onion slices. Cook, stirring occasionally, until
they begin to lose liquid and volume, then add the diced potatoes. Stir
to coat the potatoes in butter. Add the garlic and cook until the mixture
becomes aromatic. Add the sugar and stir to combine. Note: The sugar will
help caramelize and brown the vegetables. Cook until the vegetables are a
rich brown color. Season to taste with salt.
Pour in the stout or other dark beer and bring to a low boil until the
alcohol is cooked off, just a few minutes. Add the beef or vegetable stock
and season with freshly ground black pepper. Toss in the bay leaf and dried
herbs of choice. Simmer for a few minutes over medium heat. Taste for
seasoning and adjust as needed. Remove the bay leaf before serving.
Serve in heated bowls. If desired, top bowls with toasted French bread
and melted Irish cheddar. Serves 4-6.
