PEANUT BUTTER BROWNIE CHEESECAKE

Brownie crust
1 cup butter
6 ounces unsweetened chocolate, coarsely chopped
2 cups sugar
4 eggs
2 teaspoons vanilla
1-1/2 cups all-purpose flour
1/2 teaspoon baking soda
3/4 cup hot fudge ice cream topping, warmed
Cheesecake
2 (8-ounce) packages softened cream cheese
1-1/2 cups crunchy peanut butter
1 (14-ounce) can sweetened condensed milk
1-1/2 cups whipping cream
2 tablespoons powdered sugar
1 (14-ounce) bag mini unwrapped Reese's Cups (family-size bag)
1/4 cup creamy peanut butter, warmed in microwave
For crust: Grease a 9x13-inch pan.
In a saucepan, melt butter and chopped chocolate over low heat,
stirring constantly. Remove from heat; cool. Stir sugar into cooled
chocolate mixture in saucepan. Add eggs, one at a time, beating after
each addition until combined. Stir in vanilla.
In a small bowl, stir together the flour and baking soda. Add flour
mixture to chocolate mixture; stir until combined. Spread the batter in
the greased pan. Bake for 30 minutes at 350 degrees. Cool completely.
Cut brownies into bars.
Using 3/4 of the bars (reserve the other 1/4), press brownies into the
bottom of a 9x3-inch springform pan, forming an even crust. Spread with

3/4 cup finely chopped Georgia pecans
1/4 cup unsweetened cocoa powder
1 cup confectioners' sugar
1/3 cup miniature semisweet chocolate chips
6 egg whites, at room temperature
2/3 cup granulated sugar, divided
Preheat oven to 300 degrees. Lightly grease and flour 2 baking sheets.
In a small bowl, combine pecans, cocoa, confectioners' sugar and
chocolate chips. Set aside.
In a large bowl, beat egg whites with electric mixer until they just
begin to stiffen. Gradually beat in 2 tablespoons of the sugar and continue
beating until egg whites are stiff. Gradually add remaining sugar, beating
at a low speed. Gently fold in pecan mixture.
With 2 spoons, measure out tablespoon-size scoops of meringue
onto prepared baking sheets. Bake meringues until dry, about 1 hour.
With metal spatula, remove from pan, let cool on wire rack, then wrap and
store in a dry place. Note: Meringues can be made up to a week in advance.
To package as gifts: Stack meringues inside a cellophane bag and wrap
wired ribbon around the neck of the bag. Yields 80 small meringues.

the hot fudge ice cream topping; set aside.
For cheesecake: In a large mixing bowl, combine
cream cheese and crunchy peanut butter. Beat with
an electric mixer on medium speed until just
combined. Add sweetened condensed milk. Beat
until combined.
In a medium bowl, beat whipping cream until
soft peaks form. Add powdered sugar. Beat until stiff
peaks form. Reserve 1/2 cup of the whipped-cream
mixture. Fold remaining whipped cream into the
cream-cheese mixture.
Spread 1/2 of the cream-cheese mixture over the
hot fudge layer in pan. Sprinkle with 1/2 of the mini
Reese's Cups and crumbled pieces of the reserved
brownie bars. Spread remaining cream-cheese
mixture over the brownies.
Top with the reserved whipped cream. Sprinkle
with remaining mini Reese's Cups and drizzle with
warm peanut butter. Cover and chill for 4 to 24 hours.
