Kale salad kits, with greens already washed and ready to use, make this
salad easy to prepare. Save the included dressing packet for another use
and make a fresh dressing. This recipe comes from Georgia Grown.
ARUGULA SALAD WITH PEANUT AND SESAME
DRESSING
2 tablespoons rice wine vinegar
1/4 cup orange juice
2-1/2 teaspoons tahini
1/4 cup toasted peanuts, divided
1 cup canola or vegetable oil
2 leaves mint, torn
2 cups kale, washed, dried, torn
1 cup arugula
Salt, to taste
3 French breakfast radishes or regular red radishes, sliced thin
Add vinegar, orange juice, tahini and half of the peanuts to a blender.
Blend until smooth. While the blender is still running, slowly pour in the
canola or vegetable oil. Add mint leaves and pulse a few times to break
them up.
Place the kale in a bowl and drizzle a little bit of the dressing over
it. Using your hands, massage the kale to break down the fibers. Add the
arugula to the bowl and toss with the kale. Add more dressing to coat, then
season with salt to taste.
Place greens in a serving bowl. Top with the rest of the peanuts and
radish slices and serve. Store any remaining dressing, refrigerated, for
another use. Serves 2-4 as a side dish.

restaurant Madras Mantra offers a no-lettuce vegetable salad on
its weekend buffet. This recipe is a variation of the one served
at the restaurant. Vary the crunchy veggies to suit your taste.
Use thin (ideally organic) carrots with their tops for maximum
flavor, and be sure to wash and dry all vegetables thoroughly so
the dressing adheres properly.
INDIAN VEGETABLE SALAD
1 cup Persian or mini cucumbers, cut into 1/4-inch pieces
1 cup chopped (1/4-inch pieces) celery
1 cup chopped carrots
4 or 5 cocktail tomatoes, cut into eighths (about 1 cup)
3/4 cup green bell pepper (about 1/2 large pepper), stems, ribs
and seeds removed
1/3 cup minced scallion (including some of the green part)
1/3 cup minced red onion
Dressing
1 teaspoon grated fresh ginger, peeled
1/2 cup minced fresh mint leaves
1-1/2 teaspoons fresh lime juice
2 tablespoons lemon juice (ideally Meyer lemon)
1 tablespoon white wine vinegar
1 teaspoon whole-grain mustard
1/2 teaspoon chaat masala (an Indian spice mix), or to taste
3/4 cup mild peanut oil
Sea salt or pink Himalayan sea salt, to taste
Freshly ground white or black pepper, to taste
Place cucumbers, celery, carrots, tomatoes, bell pepper,
scallion and red onion in a bowl.
In a glass measuring cup, whisk together the ginger,
minced mint leaves, lime juice, lemon juice, white wine vinegar,
mustard, chaat masala, peanut oil, sea salt and freshly ground
pepper. Pour over vegetables and toss to combine thoroughly.
Serves 4 as a main dish or 6-8 as a side dish.
