Zucchini is Laurie Moore's favorite vegetable. She and her husband,
Will, own Moore Farms & Friends, a community-supported agriculture
(CSA) organization based just over the state line in Woodland, Ala., and
they deliver fresh fruits and vegetables grown on their farm (and other
farms in Georgia and Alabama) to several locations in metro Atlanta.
" That ['zucchini is my favorite'] may seem a bit odd for a farmer to say.
We have grown hundreds of different fruits and vegetables over the years,
but zucchini is the one I love the most. From planting, growing, harvesting
and preparing [it] for meals, it's just a lot of fun, " she says.
" Zucchini is one of the fastest seeds to germinate in the garden if the
soil is warm-60 to 70 degrees-and it's very satisfying to see them pop
up within a few days. They love full sun, and sometimes it seems you can
watch them grow. "
Moore says that zucchini also can be grown in containers if you have
limited space, and the plants will produce a bounty for cooking.
" When zucchini plants are happy [with] sun, rain and warm temperatures,
they will produce all summer. I guess that's another reason why they
are my favorite vegetable. They are happy plants! "
Zucchini can be used in many different dishes, including pie.
Amy Casey, a personal chef in Manasquan, N.J., created one of my
favorite zucchini recipes. I love this pie because it is so versatile. It's great
for brunch, lunch or dinner, and it's especially easy if you use a storebought
pie crust. Leftovers heat well, too.
ZUCCHINI PIE

1 unbaked 9-inch pie crust (can use frozen, deep-dish crust)
2 teaspoons Dijon mustard
3 tablespoons salted butter
4 cups zucchini, thinly sliced
1 cup onion, diced
3 garlic cloves, chopped
1 teaspoon kosher salt
1/2 teaspoon pepper
3 large eggs, slightly beaten
2 tablespoons fresh parsley
1 teaspoon fresh thyme (or 1/4 teaspoon dried)
2 cups cheese, shredded (sharp cheddar, mozzarella, Monterey Jack or a
combination)
Preheat oven to 375 degrees. Line a 9-inch pie
plate with the pie crust and brush with the Dijon
mustard. Set aside.
In a large saute pan over medium-high heat,
melt the butter. Add zucchini, onion and garlic and
saute for 7-8 minutes or until the onions are slightly
translucent and the zucchini is just starting to soften.
Remove from heat and allow to cool for about 5-10
minutes.
In a large bowl, combine the salt, pepper, eggs,
herbs and cheese. Add the cooled zucchini mixture
and stir to combine. Pour into the prepared pie crust.
Bake for 35-40 minutes or until the crust and the

top of the pie are golden brown. Cool slightly before
serving. Serves 8.
