Satisfying smoothies
Make mom proud with healthy drinks
e all want to be healthier, and eating nutritious
foods can be a big part of it.
My mom taught me that to be healthy and
strong, I should eat a balanced diet that includes fruits and
vegetables. The easiest way to put her good advice to work is in
a smoothie!
Smoothies require three basic types of ingredients: solids,
liquids and flavorings.
" Solid " ingredients give smoothies texture and can be fresh
or frozen. Blueberries, strawberries, peaches and mangoes
are great frozen starters for smoothies. Fresh fruits-such as
bananas, apples and kiwis-are great additions, too. Spinach,
arugula, chard and other leafy greens or root veggies like carrots
and beets can ramp up your smoothies.
The " liquid " part of the smoothie can be plain or flavored
yogurt, milk, almond milk, fruit juice or even water. Liquid
ingredients make smoothies easier to sip with a straw when
everything gets blended together.
Lastly, " flavorings " -additions such as honey,
cinnamon and lemon or lime juice-help put the
finishing touch on this tasty treat.
Once all the ingredients are gathered and
blended, there is one final consideration: consistency.
The perfect smoothie consistency could be
described as being " ketchup " -like-not too thick
but not too thin. It should be easy to pour and
easy to sip.
Nothing beats mom's good advice, and nothing
makes it easier to follow than making nourishing
smoothies.

GREEN MACHINE
2 cups fresh spinach, stems removed
1 cup fresh arugula leaves
1 cup tart green apple (not peeled), diced
1/2 cup kiwi fruit, peeled, diced
1/2 cup cucumber, diced
1 tablespoon peanut butter
1 cup almond milk, plus more as needed
(1-2 cups total)
Place the spinach, arugula, apple,
kiwi, cucumber and peanut butter in a
blender and pulse 1-2 times to chop the
ingredients. Add in 1 cup almond milk
and blend on high until the mixture is
smooth. Blend in more almond milk, as
needed, to adjust the consistency. Pour
mixture into a pitcher and chill for 1 hour
in the refrigerator. Serves 3-4.
