Oliver Farm Infused Sunflower Oil (available salt-free)
resulted from experiments of dipping bread into sunflower oil
mixed with a variety of spices and herbs. Once a particular
blend seemed ideal, it became a new product for the company.
Cubed sweet potatoes often are sold in salad sections of
most grocery chains, saving preparation time. Check the
container for weight. You also could substitute butternut
squash for the sweet potatoes.
This recipe pairs well with roasted pork tenderloin,
duck or chicken.
ROASTED SWEET POTATOES WITH OLIVER
FARM INFUSED SUNFLOWER OIL
1-1/2 pounds sweet potatoes
About 2 tablespoons Oliver Farm Infused Sunflower Oil
Preheat oven to 400 degrees. Line a baking sheet with
parchment paper and set aside.
Clean sweet potatoes and peel off skins, if desired. Dice
into about 1-inch cubes. Place the cubed sweet potatoes in a
bowl and top with sunflower oil. Toss the sweet potatoes in the
oil to coat them evenly, then arrange them in a single layer on
the prepared baking sheet.
Roast sweet potatoes for 30 to 35 minutes or until the
pieces are evenly browned and easily pierced with a fork.
Halfway through roasting, use a spatula to flip the sweet
potatoes to ensure even browning. Serves 2-4.
Enhanced by Oliver Farm's green peanut oil, sauteed mushrooms
pair well with any grilled meat.
Oliver Farm Green Peanut Oil is super aromatic and a
fine finishing oil that can dress up a variety of dishes. (This is
not the kind of peanut oil typically found in grocery stores.)
Oliver Farm Infused Sunflower Oil also would work well in
this recipe.
GARLIC BUTTER MUSHROOMS WITH
OLIVER FARM GREEN PEANUT OIL
1-1/2 tablespoons unsalted butter
1-1/2 tablespoons Oliver Farm Green Peanut Oil
1/2 onion, peeled, chopped, optional
1 pound cremini or button mushrooms
2 tablespoons dry white wine,* optional
1 teaspoon fresh thyme leaves, chopped
2 tablespoons fresh parsley leaves, chopped, divided
6 cloves garlic, peeled, minced
Salt, to taste
Freshly ground black or white pepper, to taste
*Note: Use a good-quality, dry white wine, such as Pinot
Grigio, Chardonnay or Sauvignon Blanc.
Heat the butter and green peanut oil in a large pan or
skillet set over medium-high heat. Saute the onion until
softened (about 5 minutes). Add the mushrooms and cook
about 4 to 5 minutes until golden and crispy on the edges.
Pour in the wine, if using, and cook for 2 minutes to

reduce slightly. Stir in thyme, 1 tablespoon parsley and garlic.
Cook for another minute until fragrant.
Season generously with salt and pepper to your taste.
Sprinkle with remaining parsley and serve warm. Serves 2.
