" Explaining to people how peanuts grow was
a big part of what I did, " says Sandra Walters, who
worked at the Plains Visitors Center for 20 years.
Fuller says she and other Plains residents ate
a lot of peanuts.
Lifelong resident Mill (Millard) Simmons still
keeps a bowl sitting by his chair. He has a recipe for
parched peanuts that he says anyone can make.
" Put clean, shelled peanuts in a flat baking
dish, spread them out and put it in a preheated
350-degree oven and roast for 20 to 25 minutes, "
Simmons says. " You can start smelling them when
they are getting ready. "
He says that, unlike fried peanuts, parched
peanuts have no oil or salt.
Fried peanuts are a staple of Plain Peanuts, a
store founded in 1988 by Bobby Salter. It initially was
housed in Billy Carter's old service station, but
Salter moved it to the old Carter peanut warehouse.
Amy and Ken Green bought the Main Street store
last year.
Amy Green says people come from all over to
get the most popular offering: peanut butter ice
cream.
" We started the process of making it with four
recipes and would test it out on the tourist train
volunteers, " Salter says. " After about one year and
three months, we hit on the right recipe. "
The recipe remains a secret because the store's
sales contract contains a nondisclosure clause.
Peanuts are still the mainstay of Plains'
economy. Two peanut-processing warehouses are
there, and the peanut harvest is celebrated every

PEANUT BUTTER ICE CREAM
6 eggs
2 cups sugar
2 cups whipping cream
2 cups light cream
1 cup peanut butter
4 teaspoons vanilla
In a mixing bowl, beat all ingredients together.
Pour into 3 shallow, metal 3-cup refrigerator trays.
Place in freezer until partially frozen. One at a time,
transfer to a mixer bowl and beat until smooth.
Return each batch to its tray and freeze until firm.
To serve, scoop into bowls and drizzle with
strawberry preserves or a chocolate sauce.

sold by Amy Green at her Plain Peanuts shop in downtown Plains. The recipe for
