traditional riads around the medina," says
Sefrioui. "It has a lot of light and space and
is very open to the outside. This differs from
other riads, which are focused inward."
Sefrioui gave Pillet free rein on the
project, but with one condition: that Pillet
preserve the monumental portico consisting
of 13 elegant arches. "Because it is set on a
hill, the arches of Lyautey's private residence
have long been part of the city landscape and
a point of reference," Pillet explains. "They
belong to the visual culture of Fez."
Pillet placed armchairs he designed for
the hotel under the arches, creating an area
that serves as a cocktail lounge, crowned
by a bespoke marble bar at one end. "The
idea was to be a very clearly contemporary
hotel but also integrated into the traditional
aesthetic and mood that is specific to Fez,"
says Pillet, who wove in numerous materials
and the country's time-honored crafts,
including sculpted plaster, Taza stone,
ceramics, tin lamps, and black marble.
He also applied a combination of
leather, stone, and wood inside Sahrai's 50
guestrooms, which are chiefly decorated in
gray tones with the addition of deep orange
leather headboards and bed frames for a hint
of color. Light floods in through large bay
windows, and along the walls Taza stone and
intricate plaster panels create contrasting
textures of rich intricacy and clean lines.
Bathrooms, meanwhile, are contained
in glass boxes. "I did this to open the space

and to bring the light and the view through
the room," Pillet explains, though white
curtains can close off the transparent rooms
so guests can enjoy the sunken marble tub
and rain shower in privacy. Sizable ceramic
vases from the Moroccan city of Safi adorn
bathrooms and the sleeping quarters.
In one of the hotel's restaurants, Amaraz,
Pillet employed a palette of mustard and
white, and suspended bulbous traditional
Moroccan tin lamps from a beamed ceiling
over leather chairs, while screens divide the

from a mirrored laminate ceiling, and
numerous floor-to-ceiling windows allowing
warm breezes to swirl through. Guests can
also enjoy 360-degree views of Fez from
both the rooftop bar and pool. hd
